Ingredients

For Chicken:

  • 2 Large chicken breasts
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 2 tbsp Butter

For Marry Me Sauce:

  • 2 tbsp Butter
  • 1 Finely chopped medium onion
  • 2 tbsp Tomato paste
  • 1 cup Heavy cream (240 ml)
  • ½ cup Chopped sun-dried tomatoes
  • 1–2 tsp Chicken powder
  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • ½ tsp Salt
  • ¼ tsp Black pepper

For Assembly:

  • 2 Sheets puff pastry
  • 200–300 g Mozzarella cheese
  • 3–4 Handfuls baby spinach
  • 1 Beaten egg
  • 1 tbsp Sesame seeds

Instructions

  • Season the chicken breasts with garlic powder, onion powder, paprika, salt, and black pepper. Melt the butter in a large frying pan over medium heat, then cook the chicken until golden on both sides and fully cooked through. Allow it to rest for a few minutes before slicing into thin pieces.
  • Using the same pan, melt the butter and sauté the chopped onion until soft and translucent. Stir in the tomato paste and cook for 1–2 minutes to deepen its flavour. Pour in the heavy cream and let it gently simmer until slightly thickened. Add the chopped sun-dried tomatoes along with the chicken powder, garlic powder, onion powder, salt, and black pepper. Stir well, then remove from the heat and allow the sauce to cool slightly.
  • Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper. Place one sheet of puff pastry onto the prepared tray.
  • Spread the cooled Marry Me sauce evenly over the pastry, leaving a small border around the edges. Arrange the sliced chicken over the sauce, then add the mozzarella cheese and plenty of fresh baby spinach.
  • Place the second sheet of puff pastry over the filling. Press the edges firmly together and crimp with a fork to seal completely. Cut a few small slits in the top to allow steam to escape during baking.
  • Brush the entire surface with the beaten egg and sprinkle with sesame seeds. Bake for 25–30 minutes, or until the pastry is beautifully puffed, crisp, and deep golden brown.
  • Allow the hot pocket to rest for 5–10 minutes before slicing. This helps the filling set slightly and makes serving much easier.

Tips & Tricks

Cool the Sauce Before Assembling: Allow the Marry Me sauce to cool slightly before spreading it onto the pastry. This helps keep the puff pastry crisp and prevents it from becoming soggy.

Don’t Overfill the Pastry: Although it’s tempting to add extra filling, keeping the layers even makes the pastry easier to seal and helps it bake evenly.

Seal the Edges Well: Press and crimp the pastry edges firmly with a fork to prevent the creamy filling from leaking during baking.

Use Freshly Grated Mozzarella: Freshly grated mozzarella melts more evenly and creates the perfect cheesy pull in every slice.

Rest Before Slicing: Let the hot pocket rest for a few minutes after baking so the filling has time to settle, making cleaner slices.
