Ingredients

  • 4 tbsp Yogurt
  • 4 tbsp Mayonnaise
  • 1 Finely diced medium onion
  • 4–5 Thinly sliced garlic cloves
  • 2 tbsp Oil (for frying)
  • 1 tbsp Finely chopped fresh dill
  • 1–2 tsp Lime juice (to taste)
  • ¼ tsp Salt (or to taste)
  • ¼ tsp Freshly ground black pepper
  • 1 bag of potato chips (for serving)

Instructions

  • Finely dice the onion and thinly slice the garlic so they cook quickly and evenly. Keeping the pieces relatively uniform will help prevent some from burning while others are still soft.
  • Heat the oil in a frying pan over medium heat. Add the onion and garlic and fry together, stirring frequently, until golden brown and crispy. Keep a close eye on the garlic towards the end because it can go from golden to burnt quite quickly.
  • Remove the fried onion and garlic from the pan and allow them to cool slightly. Drain away any excess oil so it does not make the finished ranch dip greasy.
  • Add the yogurt and mayonnaise to a mixing bowl and stir together until completely smooth and creamy.
  • Stir the cooled fried onion and garlic into the creamy mixture. You can also reserve a small amount to sprinkle over the top before serving for extra crunch.
  • Mix in the finely chopped fresh dill, lime juice, salt and freshly ground black pepper. Start with a smaller amount of lime juice, taste, then add more if you prefer a tangier dip.
  • Stir until everything is evenly combined. You can serve the dip immediately, or refrigerate it for 15 to 30 minutes to allow the flavours to blend. Transfer to a serving bowl and enjoy with crispy potato chips.

Tips & Tricks

Watch the garlic carefully: Thinly sliced garlic cooks quickly and can become bitter if it burns. Stir frequently and remove it once it reaches a beautiful golden colour.

Drain excess oil: Letting excess frying oil drain from the onion and garlic keeps the ranch dip rich and creamy rather than oily.

Let the fried ingredients cool: Avoid adding piping hot onion and garlic directly to the yogurt mixture. Let them cool slightly first to help maintain the creamy texture.

Use fresh dill: Fresh dill gives this dip a brighter, fresher flavour and works particularly well with the garlic, lime and creamy base.

Adjust the lime gradually: Start with 1 teaspoon, taste the dip and add another teaspoon if you want more acidity.

FAQs

Can I make Crispy Garlic Ranch ahead of time?
Yes. You can prepare the dip ahead and keep it covered in the refrigerator until serving. For the best crunchy texture, reserve some of the crispy onion and garlic separately and add it to the top just before serving.

What can I serve with this Crispy Garlic Ranch?
Potato chips are an especially good match, but you can also serve it with crackers, toasted bread, fries or fresh vegetables such as carrots, cucumber and bell peppers.

How should I store leftover ranch dip?
Transfer leftovers to an airtight container and keep them refrigerated. For the best flavour and texture, enjoy the dip within 2 to 3 days. Keep any crispy onion and garlic reserved for garnish in a separate container so it stays crunchy.

Can I use lemon juice instead of lime juice?
Yes. Fresh lemon juice is a good substitute and will provide the acidity needed to balance the creamy mayonnaise and yogurt.

Why did my garlic turn bitter?
Garlic becomes bitter when it is fried for too long or allowed to burn. Keep the heat at medium, stir frequently and watch it closely once it begins turning golden.
