For Chili Cheese Sauce:

  • ½ tbsp Plain flour
  • 1 cup Milk
  • 1 cup Cheddar cheese (grated)
  • 1 tsp Chilli flakes
  • ½ tsp Paprika

For Bowl:

  • 1 Large chopped romaine lettuce
  • 1 cup Rinsed and drained black beans
  • 2 Ears roasted corn (kernels sliced off in long strips)
  • 1 Sliced avocado
  • ½ cup Fresh salsa
  • ¼ cup Shredded mozzarella or Mexican-style cheese (optional)
  • Fresh chopped cilantro
  • Lime wedges

Instructions

  • Heat a large skillet over medium heat and sauté the minced garlic until fragrant. Add the ground beef and cook until browned, breaking it apart as it cooks. Stir in the tomato paste, spices, and beef stock, then simmer until the liquid has mostly reduced. Finish with fresh lime juice and set aside.
  • Lightly brush the sweet corn with olive oil and season with salt and black pepper. Air fry or roast until lightly charred and tender, then carefully slice the kernels from the cob.
  • Combine the diced tomatoes, cucumber, red onion, cilantro, lime juice, salt, and pepper in a bowl. Mix well and refrigerate until ready to assemble the bowls.
  • Melt the butter in a saucepan and cook the garlic until fragrant. Whisk in the flour, then gradually add the milk while whisking continuously until smooth. Stir in the cheddar cheese and seasonings, cooking until the sauce becomes rich, creamy, and fully melted.
  • Divide the chopped romaine lettuce between serving bowls. Arrange the seasoned taco beef, roasted corn, black beans, avocado slices, pico de gallo, and fresh salsa over the lettuce. Drizzle generously with the warm chili cheese sauce, sprinkle with mozzarella if using, garnish with fresh cilantro, and serve immediately with lime wedges.

Tips & Tricks

Roast the corn for maximum flavour: Roasting or air frying the corn adds a naturally sweet, smoky flavour that makes the taco bowl taste even more like restaurant-quality Mexican food.

Don’t overcook the beef: Cook the beef just until browned and allow it to simmer gently with the spices. This keeps it juicy while allowing the seasoning to fully develop.

Meal prep friendly: Prepare the taco beef, chili cheese sauce, and pico de gallo in advance, then store them separately. Assemble the bowls just before serving to keep the vegetables crisp and fresh.

Easy variations: Swap the ground beef for ground chicken, turkey, or grilled chicken breast for a leaner option. You can also add cooked rice, quinoa, tortilla chips, jalapeños, or pickled onions for extra texture and flavour.

Storage Tips: Store the taco beef, chili cheese sauce, pico de gallo, and vegetables in separate airtight containers in the refrigerator for up to 3–4 days. Reheat the beef and cheese sauce before assembling fresh high-protein taco salad for the best flavour and texture.
