Honey Chipotle Chicken Quesadillas
Ingredients
For the chicken:
- 2 Chicken breasts (or ~400–500 g, diced small)
- 1 tbsp Ginger-garlic paste
- 1½ tbsp Chipotle paste (adjust to taste)
- 1½ tbsp Honey
- ½ tsp Garlic powder
- ½ tsp Onion powder
- ½ tsp Paprika
- Salt (to taste, ~¾ tsp)
- ½ tsp Black pepper
- 1 tbsp Oil
For the sauce:
- ½ cup Mayonnaise
- 1 tbsp Honey
- 1–2 tsp Chipotle paste
- Salt & black pepper (to taste)
For the filling:
- 1 cup Shredded mozzarella cheese
- ½ Finely chopped small onion
- ½ Finely chopped bell pepper
- 1 Finely chopped small tomato
Other:
- 3–4 Tortillas
Instructions
- Heat the oil in a large skillet over medium heat. Add the diced chicken, ginger-garlic paste, chipotle paste, honey, garlic powder, onion powder, paprika, salt, and black pepper. Cook for 6–8 minutes, stirring occasionally, until the chicken is fully cooked, lightly caramelized, and coated in the rich honey chipotle glaze.
- In a small bowl, whisk together the mayonnaise, honey, chipotle paste, salt, and black pepper until smooth and creamy. Taste and adjust the sweetness or spice level according to your preference.
- Combine the finely chopped onion, bell pepper, and tomato in a bowl. Mix gently and set aside until ready to assemble the quesadillas.
- Place a tortilla in a dry skillet over medium heat. Spread an even layer of the cooked chicken over one side, followed by a generous amount of mozzarella cheese. Top with another tortilla or fold the tortilla in half to enclose the filling.
- Cook each quesadilla for 2–3 minutes per side, flipping carefully once the underside is golden brown. Continue cooking until both sides are crisp and the cheese has completely melted.
- Carefully open the quesadilla slightly and add the fresh vegetable mixture. Drizzle generously with the creamy honey chipotle sauce, slice into wedges, and serve immediately while hot and crispy.
Tips & Tricks
Don’t overfill the quesadillas: Using too much filling can make flipping difficult and cause the cheese and chicken to spill out during cooking.
Cook over medium heat: Medium heat allows the tortillas to become perfectly crisp while giving the cheese enough time to melt completely without burning.
Customize the heat level: Adjust the amount of chipotle paste depending on your preferred spice level. Add extra honey if you’d like a sweeter glaze.
Try different cheeses: Mozzarella provides excellent meltability, but you can also use Monterey Jack, cheddar, pepper jack, or a Mexican cheese blend for extra flavour.
Storage Tips: Store leftover chicken separately in an airtight container in the refrigerator for up to 3 days. Assemble and cook fresh quesadillas when ready to serve for the crispiest texture. Leftover cooked quesadillas can also be refrigerated for 2 days and reheated in a skillet or air fryer until crispy again.
