Chocolate Puddle Cake
Ingredients
- 115 g Unsalted butter
- 133 g Granulated sugar
- 133 g Packed brown sugar
- 3 Large eggs
- 90 g Bread flour
- 70 g Unsweetened cocoa powder (sifted)
- ½ tsp Sea salt
- 1 tsp Instant coffee (dissolved in 1 tsp hot water)
- 1 tsp Vanilla extract
- 90 g Chocolate chips / chopped chocolate
For Chocolate Puddle Sauce:
- 150 g Chopped dark chocolate (preferably 60–70%)
- 180 ml Heavy cream
- 20 g Unsalted Butter
- 1 tbsp Honey or brown sugar
- Pinch of sea salt
- ½ tsp Vanilla extract
Instructions
- First, preheat your oven to 175°C / 350°F. Line a 20 × 20 cm (8 × 8 inch) baking pan with parchment paper, leaving a little overhang on the sides. This will make it much easier to lift the brownies out once they have cooled.
- Place the unsalted butter in a saucepan and melt it gently over low heat. Once completely melted, remove it from the heat and allow it to cool slightly. The butter should remain liquid but should not be piping hot when added to the eggs.
- Meanwhile, add the eggs, granulated sugar, and brown sugar to a large mixing bowl. Whisk for 2 to 3 minutes, until the mixture is smooth, well combined, and slightly lighter in colour. This helps create a smoother brownie batter while incorporating a little air into the mixture.
- Slowly drizzle the warm melted butter into the egg and sugar mixture while whisking continuously. Adding it gradually helps the butter blend evenly into the batter.Continue mixing until the mixture looks smooth and glossy.
- Next, stir the instant coffee into the hot water until dissolved. Add the coffee mixture and vanilla extract to the brownie batter and mix until evenly incorporated. The coffee will not make the brownies taste strongly of coffee. Instead, it enhances the depth and intensity of the chocolate flavour.
- Sift the cocoa powder and bread flour into the bowl, then add the sea salt. Gently fold everything together using a spatula until just combined.Be careful not to overmix. Stop as soon as you no longer see dry patches of flour or cocoa.
- Add the chocolate chips or chopped chocolate and gently fold them through the batter.Try to distribute the chocolate evenly so that every brownie cube has little pockets of melted chocolate throughout.
- Pour the batter into the prepared pan and smooth the surface with a spatula.Bake for approximately 25 to 30 minutes, checking from around the 25 minute mark. The edges should look set, while the centre should still have a slight softness.A toothpick inserted into the centre should come out with moist, fudgy crumbs rather than completely clean.
- Allow the brownies to cool completely in the pan before cutting. For especially clean cubes, refrigerate them for 30 to 60 minutes once cooled. Then, lift the brownies out using the parchment paper and cut them into chunky 2 to 3 cm cubes.
- While the brownies are cooling, roughly chop the dark chocolate and add it to a saucepan along with the heavy cream, butter, honey or brown sugar, and a pinch of sea salt.Heat everything gently over low heat, stirring continuously.
- Once the chocolate is almost completely melted, remove the saucepan from the heat. Continue stirring until the remaining chocolate melts completely and the sauce becomes smooth and glossy. Finally, stir in the vanilla extract.Allow the sauce to cool for 3 to 5 minutes. It should be warm and thick enough to coat the brownies while still being easy to pour.
- For each serving, place a generous handful of brownie cubes into a shallow bowl.Pour some of the warm chocolate sauce around the brownies, allowing it to collect underneath and between the cubes. Then, add a few more brownie pieces on top.
- Generously drizzle the remaining warm chocolate sauce over the brownie cubes. Let it flow naturally between the pieces and pool around the base. This is what gives the dessert its signature Chocolate Puddle Cake appearance.
- Finally, add a tiny pinch of flaky sea salt and, if desired, finish with a few chocolate shavings.Serve immediately while the brownies are fudgy and the chocolate sauce is warm, glossy, and flowing.

Tips & Tricks
Keep the Brownies Fudgy: Do not wait for a completely clean toothpick when checking the brownies. Moist crumbs are exactly what you want for a rich, fudgy texture.
Cool Before Cutting: Allow the brownies to cool completely before cutting them into cubes. If you want particularly neat pieces, refrigerate them briefly before slicing.
Do Not Overmix the Batter: Once the flour and cocoa powder are added, fold gently and stop as soon as everything is incorporated. Overmixing can make the brownies less tender.
Serve It Warm: For the best Chocolate Puddle Cake experience, assemble each portion shortly before serving. Warm sauce flowing through fudgy brownie cubes gives you the best texture and flavour.
Keep the Sauce Pourable: The chocolate sauce should be warm and fluid rather than extremely hot. If it becomes too thick, gently warm it over low heat and stir until it reaches the right consistency.
FAQs
Can I make the brownies ahead of time?
Yes. The brownies can be baked a day ahead and stored in an airtight container. Cut them into cubes shortly before serving for the best texture.
Why are my brownies too cakey?
They may have been overbaked or the batter may have been overmixed. For this recipe, remove the brownies when the edges are set but the centre still has some softness.
Can I use all purpose flour instead of bread flour?
Yes. All purpose flour can be used as a substitute. Avoid adding extra flour, as this can make the brownies firmer and less fudgy.
How should I store Chocolate Puddle Cake?
Store the brownie cubes and chocolate sauce separately in airtight containers in the refrigerator for up to 3 to 4 days. Reheat the sauce gently and warm the brownies slightly before assembling.
Can I freeze the brownies?
Yes. The baked brownies can be frozen before cutting or as individual cubes. Wrap them tightly and freeze for up to 2 months. Thaw in the refrigerator or at room temperature before serving.
