Ingredients

  • 1 Whole chicken (1.5–2 kg)

For Brine:

  • 2–3 tbsp Salt
  • 2–3 tbsp Vinegar
  • 1 tbsp Ginger-garlic paste
  • ~2 L Water

For Herb Butter:

  • 3 tbsp Softened unsalted butter
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1½ tsp Paprika
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 2 tbsp Chopped cilantro
  • 1 tbsp Chopped dill

For Pan Base:

  • 1–2 tbsp Olive oil
  • ½ Sliced lemon
  • 1 Halved garlic bulb
  • 2 Halved onions
  • 2 Green chilies
  • 1 – 1½ cups Chicken stock
  • Fresh herbs (any mix)

Instructions

  • Combine the salt, vinegar, ginger-garlic paste, and water in a large bowl or container. Submerge the whole chicken completely and refrigerate for 6–12 hours. Once brined, rinse the chicken thoroughly under cold water and pat it completely dry with paper towels. For extra crispy skin, leave the chicken uncovered in the refrigerator for 1–2 hours to air-dry if time allows.
  • In a small bowl, mix the softened butter with the salt, black pepper, paprika, onion powder, garlic powder, chopped cilantro, and chopped dill until smooth and evenly combined.
  • Carefully loosen the skin over the breast and thighs without tearing it. Spread most of the herb butter underneath the skin, then rub the remaining butter all over the outside of the chicken to ensure maximum flavour and a beautifully golden finish.
  • Heat the olive oil in a roasting pan or oven-safe skillet over medium heat. Add the lemon slices, halved garlic bulb, onions, and green chilies, allowing them to lightly char for a few minutes. Pour in the chicken stock, then add the fresh herbs to create a flavourful roasting base.
  • Place the seasoned chicken on top of the vegetables and roast in a preheated 200°C (400°F) oven for 60–75 minutes, or until the thickest part of the thigh reaches 75°C (165°F) and the juices run clear.
  • Switch the oven to the broil (grill) setting for the final 10–15 minutes until the skin becomes deeply golden and crispy, watching carefully to prevent burning.
  • Remove the chicken from the oven and allow it to rest for 10 minutes before carving so the juices redistribute throughout the meat.
  • Blend the roasted lemons, garlic, onions, herbs, stock, and pan juices until smooth. Simmer the sauce for a few minutes until slightly thickened, then serve generously over the carved roast chicken.

Tips & Tricks

Air-dry for crispier skin: After brining, leave the chicken uncovered in the refrigerator for 1–2 hours if possible. This dries the skin and helps it roast beautifully crisp.

Use a meat thermometer: The most reliable way to cook a perfect roast chicken is by checking that the thickest part of the thigh reaches 75°C (165°F).

Let the chicken rest: Allowing the chicken to rest before carving keeps the juices inside the meat instead of running onto the cutting board.

Customize the herbs: Fresh rosemary, thyme, parsley, sage, or oregano all work beautifully alongside cilantro and dill, allowing you to customize the flavour.

Storage Tips:
Store leftover chicken in an airtight container in the refrigerator for 3–4 days. Store the pan sauce separately and reheat gently before serving. Leftover chicken is also delicious in sandwiches, wraps, salads, soups, or pasta dishes.

FAQs

Do I have to brine the chicken?
While you can skip it, brining makes a significant difference by keeping the chicken much juicier and more flavourful throughout.

Can I prepare the chicken ahead of time?
Yes. You can brine and butter the chicken the day before, then simply roast it the next day.

How do I know when the chicken is fully cooked?
Use a meat thermometer. The thickest part of the thigh should reach 75°C (165°F) without touching the bone.

Can I use dried herbs instead of fresh?
Yes. Replace fresh herbs with about one-third the amount of dried herbs if needed.

What should I serve with Crispy Herb Butter Roast Chicken?
This Crispy Herb Butter Roast Chicken pairs perfectly with mashed potatoes, roasted vegetables, buttered rice, dinner rolls, garlic bread, green beans, salads, or roasted baby potatoes for a complete family meal.
