Homemade Artisan French Baguettes
Ingredients
- 375 g Bread flour
- 260 g Warm water
- 8 g Salt
- 3 g Active dry yeast
- 5 g Sugar (1 tsp)
Instructions
- Begin by activating the yeast. In a large mixing bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let the mixture rest for 5–10 minutes until it becomes foamy and bubbly, indicating that the yeast is active and ready to use.
- Add the bread flour and salt to the activated yeast mixture. Stir everything together until a rough, shaggy dough forms and no dry flour remains. At this stage, the dough will look slightly sticky and uneven, which is perfectly normal.
- Knead the dough using a stand mixer for 6–8 minutes or by hand for 8–10 minutes until it becomes smooth, elastic, and slightly tacky. Proper kneading develops the gluten, giving the baguettes their signature chewy interior and crisp crust.
- Transfer the dough to a lightly greased bowl, cover it with plastic wrap or a clean kitchen towel, and leave it to rise at room temperature for 1–1½ hours, or until doubled in size. The dough should feel light, airy, and noticeably puffed.
- Once the dough has risen, gently deflate it and divide it into 3 equal portions. Shape each piece into a rough rectangle, then tightly roll it into a long cylinder, pinching the seam closed to create the classic baguette shape. Handle the dough gently to preserve the air bubbles created during fermentation.
- Arrange the shaped baguettes on a parchment-lined baking tray or baguette pan, leaving enough space between each one for expansion. Cover loosely and allow them to proof for 30–45 minutes, or until they become slightly puffed and airy.
- Meanwhile, preheat the oven to 230°C (445°F). Just before baking, use a sharp bread lame or knife to make several diagonal slashes across the top of each baguette. These cuts help control expansion during baking while creating the traditional artisan appearance.
- Bake the baguettes for 20–25 minutes, or until they are beautifully golden brown with a crisp, crackly crust. They should sound hollow when tapped on the bottom, indicating they are fully baked. Allow them to cool on a wire rack for a few minutes before slicing and serving for the best texture.
Tips & Tricks
Do Not Skip Proper Kneading: Proper kneading ensures elasticity in the dough which is essential for airy holes and a light crumb.
Let the Dough Rise Fully: Allowing the dough to double in size helps develop flavor and improves the texture of the final bread.
Bake at High Heat: A hot oven creates steam quickly which is essential for a crispy crust and bakery style finish.
Score Just Before Baking: Scoring the dough allows controlled expansion in the oven and prevents cracking in unwanted area.
