  • 2 Beaten eggs
  • â…“ cup Flour
  • Panko breadcrumbs (to coat)
  • Oil for frying (or air fry)

For Curry Sauce:

  • 1 tbsp Butter
  • 1 Sliced onion
  • 1 Sliced carrot
  • 1 Small cubed potato
  • 1 inch ginger + 4 garlic cloves (whole)
  • Grated apple (optional)
  • 1 tbsp Brown sugar
  • 1.5 tbsp Soy sauce
  • 1 Chicken bouillon cube
  • ¾ cup Coconut milk
  • Spring onions (green part, red chilies, lemon juice (to garnish)

For Spice Blend:

  • ½ tsp each: turmeric, cumin, coriander, paprika
  • ½ – 1 tsp Black pepper
  • â…“ – ½ tsp Garam masala

Instructions

  • Butterfly the chicken breast, then cut it into even pieces and gently pound it until uniform in thickness. This helps it cook evenly and stay tender.
  • Season both sides with salt, paprika, and garlic powder, ensuring the chicken is well coated for flavor in every bite.
  • Prepare a breading station with flour, beaten eggs, and panko breadcrumbs.
  • Coat the chicken first in flour, then dip into egg, and finally press firmly into panko so it is fully covered for maximum crispiness.
  • Heat oil in a pan or preheat air fryer and cook the chicken until golden brown, crispy, and fully cooked through. Set aside and let it rest before slicing.
  • Then in a deep pan, melt butter over medium heat. Add sliced onions and cook slowly until soft, golden, and lightly caramelized for natural sweetness.
  • Add carrots, potatoes, ginger, garlic, and grated apple if using. Stir well and cook for 2–3 minutes until fragrant and slightly softened.
  • Sprinkle in the spice blend (turmeric, cumin, coriander, paprika, black pepper, and garam masala). Stir continuously so the spices toast gently and release aroma.
  • Add the chicken bouillon cube, brown sugar, soy sauce, and coconut milk into the pan. Stir well to combine all ingredients.
  • Simmer gently until the vegetables are tender and the sauce begins to thicken.
  • For a smoother texture, blend the curry mixture until silky, then return it to the pan and heat again briefly.
  • Let the curry simmer on low heat until it reaches a rich, thick consistency that coats the back of a spoon. Adjust seasoning if needed.
  • Slice the crispy chicken katsu into strips for easy serving. Spoon hot rice onto a plate, pour curry sauce generously over one side, and place sliced chicken katsu on the other side. Garnish with spring onions, red chilies, and a squeeze of lemon juice for freshness.

Tips & Tricks

Get Extra Crispy Chicken: Press the panko firmly onto the chicken so it adheres well. A second dip in egg and breadcrumbs creates an even crunchier crust.

Blend for Restaurant Texture:
Blending the curry gives it that smooth, Japanese restaurant-style consistency.

Cook Curry Low and Slow: Allowing the vegetables to soften slowly builds a deeper, richer flavour in the curry base.

Serve Immediately:
Japanese Katsu Curry is best enjoyed fresh so the coating stays crispy against the warm curry sauce.

FAQs

What makes Japanese Katsu Curry different from regular curry?
This Japanese Katsu Curry combines crispy breaded chicken cutlet with a smooth Japanese-style curry sauce, making it richer and more textured than traditional curries.

Can I bake or air fry the chicken instead of frying?
Yes, both methods work. Air frying gives a crispy result with less oil while baking provides a slightly lighter crust.

Can I make the curry ahead of time?
Yes, the curry sauce can be made in advance and reheated. Add a splash of water or coconut milk when reheating if it becomes too thick.

Can I skip coconut milk?
Yes, but coconut milk adds creaminess and balance. You can replace it with stock or milk, but the flavour will be less rich.
