Ingredients

For Spice Blend:

  • 1 tbsp Paprika
  • 2 tsp Garlic powder
  • 2 tsp Onion powder
  • 1 ½ tsp Salt (or to taste)
  • 1 tsp White pepper (or black pepper)
  • 1 tsp Black pepper
  • ½ tsp Cayenne pepper (optional for mild heat)
  • ½ tsp Mixed herbs

For Chicken Marinade:

  • 6–8 Boneless chicken thighs (or breasts, pounded to 1.5–2 cm thick)
  • 3 cups warm milk + 3 tbsp lemon juice (let sit 5 minutes to curdle slightly)
  • 2–3 tbsp Pickle juice
  • Half of the prepared spice blend

For Crispy Coating:

  • 3 cups All-purpose flour
  • Remaining spice blend
  • ¾ tsp Baking powder (Optional)

For McCrispy Sauce:

  • 1 cup Mayonnaise
  • 2 tsp Lemon juice
  • ¾ tsp Garlic powder
  • ½ tsp Sugar
  • 1 tbsp Hot sauce (optional, for spicy version)

Instructions

  • In a large bowl, combine warm milk and lemon juice and let it sit for about 5 minutes until it slightly curdles. Stir in pickle juice and half of the prepared spice blend, then add the chicken fillets. Mix well so every piece is fully coated. Cover and marinate in the refrigerator for at least 2 hours or up to 6 hours for maximum flavour and tenderness.
  • In a separate bowl, mix all-purpose flour with the remaining spice blend and baking powder if using. Ensure the spices are evenly distributed so every bite has consistent flavor.
  • Remove the chicken from the marinade and let excess liquid drip off. Coat each piece thoroughly in the seasoned flour, pressing firmly so the coating clings well and forms rough, craggy bits for extra crispiness. For a thicker crust, repeat the process by dipping the chicken back into the marinade and coating again in flour.
  • Heat oil to 170–175°C (340–350°F). Carefully fry the chicken in small batches for 8–10 minutes total, flipping halfway through, until the exterior is golden brown and crispy and the chicken is fully cooked inside. The internal temperature should reach 74°C / 165°F. Remove and drain on a wire rack or paper towels.
  • In a small bowl, prepare the sauce by mixing mayonnaise, lemon juice, garlic powder, sugar, and hot sauce if desired. Stir until smooth, then refrigerate until ready to use for best flavor and texture.
  • To assemble, spread sauce on both the top and bottom buns. Place a fresh lettuce leaf on the bottom bun, add the crispy chicken fillet, and close with the top bun. Wrap the burger in parchment or foil and let it rest for 2–3 minutes so the bun softens slightly and the flavors meld before serving.

Tips & Tricks

Use Thighs for Juicier Chicken: Chicken thighs stay more tender and juicy compared to chicken breast.

Double Dredge for Extra Crunch:
Repeating the marinade and flour coating creates a thicker, crunchier crust.

Maintain Oil Temperature: Keep the oil steady between 170–175°C for even cooking and maximum crispiness.

Don’t Skip the Resting Step: Letting the coated chicken rest briefly before frying helps the crust stick better.

FAQs

Can I air fry the chicken instead of deep frying? Yes. Spray lightly with oil and air fry until crispy and fully cooked, flipping halfway through.

What can I use instead of pickle juice? You can replace it with a little extra lemon juice or vinegar if needed.

How do I store leftovers?
Store fried chicken separately in an airtight container for up to 2 days and reheat in an air fryer or oven for best texture.

Can I prepare the chicken ahead of time? Yes. You can marinate the chicken overnight for even better flavour.
