Balochi Chicken Karahi
Ingredients
- 1 kg Chicken (bone-in preferred)
- ½ cup Oil (or as needed)
- 8–10 Cloves of garlic (whole or slightly crushed)
- 8–10 Green chilies (slit lengthwise)
- ⅓ to ½ cup Yogurt (adjust to preferred consistency)
- 1½ tbsp Coriander seeds
- 1½ tbsp Cumin seeds
- 1½ tbsp Whole red chilies or chili flakes
- 1½ tbsp Whole black peppercorns
- Salt (to taste)
- Fresh coriander (for garnish)
- Lemon juice (generous squeeze, for serving)
Instructions
- Heat oil in a karahi or heavy-bottomed wok over medium-high heat. Add the chicken pieces, stir to coat them in the oil, then cover and cook without adding any water. Allow the chicken to release its own juices and cook until tender, stirring occasionally to prevent sticking.
- Once the chicken is cooked through, uncover the pan and continue cooking over medium-high heat for 8–10 minutes until most of the liquid has evaporated and the chicken is coated in a rich, concentrated base. Remove excess oil if desired.
- Meanwhile, dry roast the coriander seeds, cumin seeds, whole red chilies (or chili flakes), and black peppercorns for 2–3 minutes until fragrant. Allow them to cool slightly, then grind into a coarse spice blend to create the traditional rustic texture.
- Add the whole garlic cloves, slit green chilies, roasted spice mixture, and yogurt to the chicken. Stir well until everything is evenly combined, then cook for another 5–7 minutes, allowing the yogurt to cook down and the flavorful masala to coat each piece of chicken.
- Garnish generously with freshly chopped coriander and finish with plenty of fresh lemon juice. Serve immediately with warm naan or roti for the best authentic Balochi Chicken Karahi experience.
Tips & Tricks
Use Bone-In Chicken: Bone-in chicken stays juicier and gives the karahi a richer, more authentic flavour.
Don’t Add Water: Traditional Balochi Chicken Karahi is cooked entirely in the chicken’s own juices, creating deeper flavour.
Roast Whole Spices Fresh: Freshly roasting and coarsely grinding the spices produces a much more aromatic and authentic result than using pre-ground spices.
Grind the Spices Coarsely: Avoid grinding the spices into a fine powder. A coarse texture gives the karahi its signature rustic taste and appearance.
Remove Excess Oil: If there’s too much oil after cooking the chicken, remove some before adding the yogurt to keep the dish balanced.
